This festive season, Corinthia Hotel London will host luxury chocolatier Damian Allsop’s unique CH2OCOLATE creations in a Christmas pop-up shop.

Damian’s distinctive chocolates are packed with more flavor and less guilt as he has expertly devised a recipe using spring water instead of dairy ingredients making them the perfect Christmas gift for foodies and those wanting to surprise chocolate lovers with something special.

The bespoke temporary stalls within the hotel will offer limited edition treats and indulgent gift ideas. Seasonal specialties exclusive to Corinthia London include the sumptuous Xmas 9 box comprising 3 mulled wine, 3 ginger spice and 3 Christmas tree chocolates. Limited edition London-themed luxuries will be on sale alongside assorted loose and boxed chocolates incorporating the famous water ganache.

The limited edition set of six “Eat London” London-themed treats, present areas of London with their associated flavors such as the Arabic spiced Edgware Road, the Soy Sauce infused China Town and the Mango and Basmati Rice Brick Lane. Grosvenor Square, home of the US Embassy, offers a new way to experience the base flavor of an American cola drink, incorporating lemon, cinnamon and popping candy into the chocolate. All are available at the Damian Allsop Chocolate Pop-Up Shop at Corinthia London for just £2 each.

Damian’s 20 year career as Head Pastry Chef across Michelin star restaurants has seen him work with some of the best chefs in the world including Gordon Ramsay and Giorgio Locatelli. In 2002, Damian created his now famous Water Ganache and unlocked the true flavor of chocolate by expertly removing the cream and butter from a traditional ganache recipe and replacing it with locally-sourced spring water to enhance the chocolate giving a more intense flavor, smooth texture and a clean, fresh sensation. Damian likens well made chocolates to a fine wine or malt whisky with complex and individual flavors which are lost when cream is used.
