Budding professionals in the hospitality industry must stay abreast of rapid changes in the field. This sound advice came today on October 11 from Chef Subroto Goswami, executive chef and culinary area champion north and west for InterContinental Hotels Group in India. He was the chief guest at the inaugural of the 16th Chandiwala Hospitality Ensemble, where teams from 30 institutes are taking part in several interesting competitions.
Chef Goswami said that the challenges the industry is facing includes the fact that customers are well traveled, and health issues are gaining more importance. The students must be aware of what is happening all around them in the world and not confine themselves to only cooking.
Hone your skills, he told the participants, adding that those wearing the white uniforms – chefs – have the responsibility to also address sustainability issues and diabetes – two areas needing great attention.
Banarsidas Chandiwala Institute of Hotel Management and Catering Technology (BCIHMCT) Director Bhupesh Kumar listed some of the new features introduced this year and asked the participants to take advantage of and enjoy the opportunity.
The success of the event can be gaged by the fact that leading sponsors continue to back the Ensemble, such as R Pure spices, Nestle, Eclat Hospitality, Rich’s, Ananda, and Sattvik India.
At the valedictory function on October 13, the chief guest will be Ms. Seema Anand, associate vice president of human resources, northern region, Dubai and Bhutan for Taj Hotels Resorts and Palaces.
