Reunion Island is a travel destination with a rich culinary heritage of exceptional combinations of foods from around the globe. The La Fabrique (The Factory), which opened on September 24, 2014 in Saint-Denis, is an invitation to discover the culinary world of Chef Jehan Colson – a world full of spices, fresh produce, and secret ingredients.

“As far as I can remember, I always wanted to be a chef or farmer, and having a commitment to Reunion’s soil was obvious,” recalled Jehan Colson, chef and owner of La Fabrique. After a successful experience as a chef at the Makassar, the gourmet restaurant at Palm Hotel & Spa, Jehan Colson launched his own restaurant in the city center of Saint-Denis.

The Factory describes itself as a place for processing raw material. With inspired cuisine and focus on being refined product-centric, the restaurant invites guests on a culinary journey – a feast for the gourmet and gourmand! What is its trade secret? Chef Jehan Colson is a lover of local recipes and every-day foods, and he selects the best seasonal produce, depending on the market, to prepare his dishes.

On the menu, La Fabrique offers a three-course dinner prepared according to the findings of the moment. The recipes are renewed every day to delight of the taste buds. At La Fabrique, lunch is an opportunity to sample the cuisine of the moment and in the evening to share a unique moment of sampling great products selected by Chef Jehan Colson.

With a special fondness for nature, the wine list offers wines whose fermentation has occurred naturally without any added products. Insiders and connoisseurs will savor the wines at the restaurant that have no sulfites added in its fermentation process. Gourmets and gourmands will not fail to discover the perfect dinner wine pairing of purely delightful flavors.

Want to end the meal on a sweet note? Desserts at La Fabrique are designed by the Pastry Chef of the Palm Hotel & Spa, Laure Fridmann, and directed by Dimitri Vitry. As for cocktails, the service is provided by Sebastian Lévèque whose creations are original and full of vitamins. Cocktails with or without alcohol, are “homemade” and not to be missed!

At La Fabrique, taste buds and eye pupils are on alert.

After the taste and smell, guests will also enjoying taking in the view of a series of photographs on Reunion Island’s sugar factories by artist-photographer Severine Chauveau. In a nod to local factories, the collection offers a fresh look at the industry of sugarcane on Reunion Island. These pictures make up the permanent collection of the restaurant.

The factory is open from Tuesday to Saturday from 12:00 to 2:30 pm and in the evening on Friday and Saturday from 7:00 to 10:30 pm.
